Ingredients
Prosciutto
- 2 oz Prosciutto
- 1 oz Pepper Bomb Adjust the quantity as desired.
- 2 oz Chèvre Optional or substitute your favorite soft cheese.
Vinaigrette
- 4 tbsp Lemon Juice
- 2 tbsp Red wine vinegar
- 1 tbsp Whole grain Dijon mustard
- 1 tbsp Hazelnut oil Preferred but you can substitute olive oil

Instructions
Vinaigrette
- Combine all ingredients in a jar and shake until well mixed or whisk them in a bowl until well blended.
Prosciutto
- Cut the prosciutto into uniform strips about 2in wide and 6in long.
- Pinch some greens and place them on one end, drizzle with the vinaigrette, and roll them up.
- Optional: If you are including cheese press about a teaspoon of fresh chèvre onto the prosciutto first, then place the greens on top and roll.
- Drizzle a little more vinaigrette over the top for flavor.
Recipe Notes
Adding cheese mutes the pepperiness of the greens. While still delicious, for you purists you may want to keep your greens plain and flavorful.
